Ingredients
Jalapeno-Lime Chicken
Chicken (breast thigh, etc.)
Jalapenos
Cilantro
Limes (zest and juice)
Chili powder
Kosher Salt and Pepper
Cumin
Honey (or sugar)
Mango Salsa
Mango
Avocado
Tiny tomatoes
Red onion or shallot
Cilantro
Lime
Salt and Pepper (to taste)
Directions
Butterfly the chicken breasts (to make them easier to cook through) and place in a ziplock bag.
Add in half a lime per chicken breast, and the zest of one lime, roughly chopped cilantro, diced jalapeno (add however much you like depending on spice preference), chili powder, salt and pepper, cumin, and honey. Mix and let marinate for 30 minutes
While this is marinating, start on your mango salsa.
Mango Salsa
Dice mango, avocado, red onion, and cilantro, and halve the mini tomatoes
Place in a bowl, squeeze the lime, season with salt and pepper.
Mix and place in the fridge until ready to serve.
Once the mango salsa is done, heat up a pan with some olive oil (or choice of oil) until hot, sear chicken on high to create a crust, then turn heat to medium-low until fully cooked.
Cut up chicken into cubes and heat up tortillas
Serve with your favorite toppings and homemade mango salsa!
